It’s hard to feel guilty about devouring this entire plate of nachos when they’re made of gluten free whole ingredient chips, homemade dairy free queso and topped with ground turkey taco meat and an abundance of veggies and healthy fats.
Ok, let me state the obvious: It’s Super Bowl Sunday. Yay, if you love football. An even bigger ‘yay’ if you love delicious food, and ‘hell yes’ if you work in advertising… let us watch in awe or embarrassment, as all the big guns show the nation what they’ve been working on for the last year. I already saw the #RealStrength spot by Dove a few days ago, and holy cow, does that get emotional. Beautifully done. And then there’s the Go Daddy spot that was already pulled from the commercial line-up because of its poor taste… Ouch, that’s an expensive mistake.
But you can’t just watch great ads or the Super Bowl, for that matter, without plenty of savory snacks. And clearly I’m not alone with this thought, as I read these alarming stats about how much food Americans consume on Super Bowl Sunday.
Woah. Quite frankly, those numbers inspired me. They made me want to create something that was in-line with all the traditional Super Bowl snacks, but healthier so I could feel good about consuming lots of it. 😉 Alas, this homemade queso was born! But since, I try to avoid dairy (personal preference), I created a dairy free version using cashews and nutritional yeast as my base. I add in a few spices, a sautéed red pepper and voila! I had this savory, spicy dip that’s packed with nutrients. Bryan loves it and had one entire plate of nachos under his belt before the game even started.
In addition to the homemade cheese, the key to making these nachos a nutritional knockout are the other ingredients which accompany the queso. I started with a whole ingredient chip as my base. (Whole ingredient means there are zero ingredients on the label that look like they belong in a chemistry lab versus a kitchen) I used Multi-Grain chips by Food Should Taste Good. Then I layered on ground turkey that I seasoned with the usual taco spices (say no to prepackaged, billion grams of sodium taco spices and switch to this version). Then came the queso. Followed by the tomatoes, lettuce and jalapeños and last but not least the Fage greek yogurt. Obviously, I had to find a way to bring Fage into the mix. My fave!
Ok, enough blabbing. You must make this queso so you can enjoy these fantastically healthy nachos.
SUPREME NACHOS WITH EASY DAIRY FREE QUESO
Prep Time: 20 Mins (not including time for cashews to soak)
Yield: 6-8 servings
Recipe inspired by: Vegan Insanity
1 c. water
1 c. raw cashews, soaked for at least 2 hours
3 T. lemon juice
1/4 t. paprika, heaping
1/4 t. cayenne pepper (or to taste)
1/2 t. red pepper flake (or to taste)
1/2 t. onion powder, heaping
1/2 t. garlic powder, heaping
1 t. salt
1 large roasted red pepper
1/4 c. nutritional yeast (Do not omit. It can be found online or in the baking section of your local supermarket… can be a little pricy but it will last you forever! And I promise to make other recipes that include it, so you can use your supply. ;-))
1. Place cashews in a bowl and cover with water for at least 2 hours.
2. Drain water.
3. Combine all ingredients in food processor.
4. Pour queso into microwave safe bowl and heat 45-60 seconds or until desired temperature.
5. Serve with tortilla chips, taco meat (beef, ground turkey or chicken), the usual taco suspects (lettuce, tomato, jalapeño, avocado, etc) and enjoy!
